Chicken Parmesan Loaf (Print Version)

# Ingredients:

→ Base Mixture

01 - 2 tablespoons cooking oil
02 - 1/3 cup chopped onion, finely diced
03 - 2 cloves garlic, crushed
04 - 2 pounds chicken mince
05 - 1/2 cup flavored bread crumbs
06 - 2 teaspoons dairy milk
07 - 1/4 cup shredded Parmesan
08 - 1 egg
09 - 2 tablespoons chopped fresh parsley
10 - 1 teaspoon herbs from Italy
11 - 1/2 teaspoon table salt
12 - 3 string cheese sticks, sliced into 1/2-inch pieces

→ Topping

13 - 1/2 cup tomato sauce
14 - 2 tablespoons crunchy panko crumbs
15 - 1 1/2 tablespoons grated Parmesan
16 - 1 tablespoon melted butter
17 - 1 tablespoon chopped parsley leaves
18 - 1 cup grated mozzarella

# Instructions:

01 - Get your oven hot at 400°F (200°C). Put foil in a loaf pan and spray it with some cooking oil.
02 - Warm up oil in a pan over medium heat. Cook the onion and garlic until they're soft. Let them cool down after.
03 - Grab a big bowl and throw in your chicken mince, flavored crumbs, milk, Parmesan, egg, parsley, herbs, salt, and the onion-garlic mix you cooked. Mix it all up really well.
04 - Put the meat mix in your pan and shape it into an 8"x4" loaf. Pour tomato sauce all over the top.
05 - Stick it in the hot oven for 45 minutes.
06 - While it's cooking, mix panko crumbs, Parmesan, melted butter, and parsley in a small bowl.
07 - Take out your meatloaf. Cover it with mozzarella first, then sprinkle your crumb mixture on top.
08 - Put it back in the oven for another 15-20 minutes. Make sure the middle hits 165°F (75°C).
09 - Don't cut it right away. Let it sit for 10 minutes before you slice and eat.
