Slice the cherry tomatoes into quarters. Toss them in a bowl with 1 teaspoon of olive oil, some Italian seasoning, salt, and pepper until they're well-coated.

For a cleaner cooking process, use an Air Fryer grill pan if you have one. If not, a pizza or cake pan works fine too.

Turn on your Air Fryer to 240°F (115°C) and let it preheat for 3 minutes. Put the dressed tomatoes in your pan and spread them out so they don't overlap.

Let them cook for about 45 minutes. Check every 10 minutes or so until they're as dry as you'd like them to be.

Big tomatoes take longer because they're juicier. You might need to cook them a bit more if you like them on the drier side.

As the tomatoes roast, mix the remaining tablespoon of olive oil with another teaspoon of Italian seasoning in a glass bowl.

Once they're done, carefully lift the tomatoes out of the pan using silicone tongs. Place them in a glass jar to keep them fresh.
