Air Fryer Dried Tomatoes (Print Version)

# Ingredients:

01 - 12 cherry tomatoes, fully ripe
02 - 1 teaspoon olive oil for mixing, and an additional 1 tablespoon
03 - 1½ teaspoons of Italian herbs, split as needed
04 - A small pinch of salt
05 - Ground black pepper to your preference

# Instructions:

01 - Slice the cherry tomatoes into quarters. Toss them in a bowl with 1 teaspoon of olive oil, some Italian seasoning, salt, and pepper until they're well-coated.
02 - For a cleaner cooking process, use an Air Fryer grill pan if you have one. If not, a pizza or cake pan works fine too.
03 - Turn on your Air Fryer to 240°F (115°C) and let it preheat for 3 minutes. Put the dressed tomatoes in your pan and spread them out so they don't overlap.
04 - Let them cook for about 45 minutes. Check every 10 minutes or so until they're as dry as you'd like them to be.
05 - Big tomatoes take longer because they're juicier. You might need to cook them a bit more if you like them on the drier side.
06 - As the tomatoes roast, mix the remaining tablespoon of olive oil with another teaspoon of Italian seasoning in a glass bowl.
07 - Once they're done, carefully lift the tomatoes out of the pan using silicone tongs. Place them in a glass jar to keep them fresh.

# Notes:

01 - These tomatoes go great on salads, pasta, or even bruschetta.
02 - Store them in the fridge in a sealed container, and they'll be good for up to 5 days.
