In one shallow bowl, whisk together the Parmesan and Cajun seasoning. In a separate bowl, combine egg whites and Cajun seasoning.

Dip each zucchini stick into the egg mixture, then coat it in the Parmesan blend. Lay them flat on the prepped baking tray with space between each piece.

Warm up mayo, cream, lemon juice, and Cajun seasoning together in a pot on medium heat. Take it off the heat and slowly mix in egg yolks, just a little at a time, stirring constantly until smooth.
