Crispy Zucchini Fries (Print Version)

# Ingredients:

→ Zucchini Sticks

01 - 1 cup Parmesan cheese blended with 1 tablespoon Cajun spice mix
02 - 2 egg whites combined with 1 teaspoon Cajun seasoning
03 - 3 medium-sized zucchinis

→ Cajun Dipping Sauce (optional)

04 - 1/2 cup of mayo
05 - 1 tablespoon of Cajun spices
06 - 2 tablespoons of freshly squeezed lemon juice
07 - 2 tablespoons of rich cream
08 - 2 beaten egg yolks

# Instructions:

01 - Slice zucchini into thin, fry-style sticks. Let them sit for about 15 minutes to dry, or gently dab off moisture using paper towels.
02 - Preheat the oven to 425°F. Cover a baking tray with parchment paper for easy cleanup.
03 - In one shallow bowl, whisk together the Parmesan and Cajun seasoning. In a separate bowl, combine egg whites and Cajun seasoning.
04 - Dip each zucchini stick into the egg mixture, then coat it in the Parmesan blend. Lay them flat on the prepped baking tray with space between each piece.
05 - Pop the tray in the oven and bake for around 30 minutes. Flip the sticks halfway so they cook evenly and develop a golden crust.
06 - Warm up mayo, cream, lemon juice, and Cajun seasoning together in a pot on medium heat. Take it off the heat and slowly mix in egg yolks, just a little at a time, stirring constantly until smooth.
07 - Pair the baked zucchini sticks with some Cajun dipping sauce, if you'd like.

# Notes:

01 - Zucchini slices should be close in size, so they bake evenly in the same amount of time.
02 - Spread the zucchini apart on the tray. Overlapping will trap steam, making them soggy.
03 - Turn the zucchini halfway through baking to make sure they crisp up on all sides.
