Preheat oven to 165°C.

Combine all-purpose seasoning blend in a bowl. Evenly coat both sides of the pork ribs with the dry rub, pressing to help it adhere.

Tightly wrap each slab of ribs in heavy-duty aluminium foil, or double layer standard foil, and arrange on a baking sheet. Bake for 150–180 minutes, until ribs are fork-tender.

If desired, allow ribs to cool, then wrap in clean foil and refrigerate up to 2 days prior to finishing.

Preheat grill to 175°C. Transfer ribs to the grill, bone side down. Brush generously with barbecue sauce. Close the lid and allow sauce to set and slightly caramelize for about 5 minutes, monitoring closely to avoid burning.

Remove ribs from grill, slice into sections, and serve immediately.

Position ribs on a clean foil-lined baking sheet, brush with barbecue sauce, and broil for 7–8 minutes until the sauce caramelizes and ribs are heated through.
