Chile Colorado Beef (Print Version)

01 - 1 bay leaf
02 - ½ teaspoon salt
03 - ½ cup yellow onion, chopped
04 - 1 teaspoon dried oregano
05 - ½ teaspoon ground cumin
06 - 3 garlic cloves, minced
07 - 1 can diced green chiles
08 - 1 ½ cups beef broth
09 - 2 tablespoons apple cider vinegar
10 - 2 tablespoons tomato paste
11 - 1 ½ tablespoons chili powder
12 - 2 tablespoons chipotle adobo sauce
13 - 2 lbs beef stew meat

# Instructions:

01 - Toss everything—except the beef—into the slow cooker and give it a good mix so it’s all blended.
02 - Throw the beef into the slow cooker. Stir well so the meat’s covered in the sauce.
03 - Set your slow cooker to low, wait 7-8 hours, and let the beef soften until it’s easy to pull apart.
04 - Dish it up with some tortillas, beans, or rice on the side. Dig in and enjoy!
