# Ingredients:

01 - 4 salmon fillets (170 g each), skin on or off
02 - 1 tablespoon olive oil
03 - 1/2 teaspoon salt
04 - 1/4 teaspoon black pepper

→ Bourbon Peach Glaze

05 - 2 ripe peaches, pitted and diced
06 - 1/4 cup bourbon (smooth, sweeter style preferred)
07 - 2 tablespoons brown sugar, packed
08 - 1 tablespoon low sodium soy sauce
09 - 1 tablespoon apple cider vinegar
10 - 1 clove garlic, minced
11 - 1/2 teaspoon freshly grated ginger
12 - 1/4 teaspoon red pepper flakes (optional)
13 - 1 tablespoon butter

→ Garnish

14 - Fresh parsley, chopped
15 - Fresh peach slices
16 - Green onions, thinly sliced

# Instructions:

01 - Melt butter in a medium saucepan over medium heat. Add diced peaches and cook for 5 to 7 minutes, stirring occasionally, until softened and juices are released.
02 - Stir in minced garlic and freshly grated ginger, cooking for 1 minute until aromatic. Pour in bourbon carefully and simmer for 2 to 3 minutes to reduce alcohol.
03 - Add brown sugar, soy sauce, apple cider vinegar, and red pepper flakes if desired. Bring to a gentle simmer, then reduce heat to low and cook for 10 to 15 minutes, stirring occasionally, until glaze is thickened. Taste and adjust seasoning as necessary. Remove from heat and set aside.
04 - Pat salmon fillets dry with paper towels. Season both sides with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side down (if applicable) and sear for 4 to 6 minutes until the skin is crisp and the fish is halfway cooked.
05 - Carefully turn salmon fillets and cook for an additional 3 to 5 minutes until cooked through and flaking easily with a fork. The internal temperature should reach 63°C.
06 - Spoon bourbon peach glaze generously over each fillet. Allow glaze to heat for 1 minute to slightly caramelize. Remove salmon from skillet and serve immediately. Garnish with chopped fresh parsley, peach slices, and thinly sliced green onions.
