Set your oven to 375°F (190°C). Slice each date open lengthwise and take out the pits.

Spoon about 1 teaspoon of Boursin cheese into each date, then gently close them a bit. Arrange on a tray.

Scatter the chopped pistachios over the stuffed dates. Press gently so they stick.

Bake for around 6 to 8 minutes until the dates are heated through and the cheese is soft.

Drizzle honey on top and, if you'd like, sprinkle fresh thyme. Best served warm.
