Dump flour, salt, and yeast in a big bowl. Pour in water and stir with your hands or a wooden spoon until everything's wet. Let it sit for half an hour to rest (this helps gluten develop).

Add a splash of olive oil and work the dough about 5 minutes till it feels smooth. Cover the bowl and leave it alone at room temp for 12-24 hours so flavors build up slowly.

Sprinkle flour on your counter, put the dough on it, and cut into 2-4 even chunks. Roll each piece into a ball shape and give them an hour to relax.

Get your oven super hot at 500°F (260°C) with a pizza stone warming inside. Pull each dough ball into a flat circle, put your toppings on, and slide it onto the hot stone. Cook for 7-10 minutes till it's bubbly with golden edges.
