Cabbage Lemon Herb Mix (Print Version)

# Ingredients:

01 - 1 teaspoon honey
02 - 1 teaspoon grated lemon peel
03 - 3 tablespoons freshly squeezed lemon juice (for dressing)
04 - 1 cup extra virgin olive oil
05 - 1 teaspoon salt
06 - 1 whole garlic bulb (around 10 cloves)
07 - 3 tablespoons lemon juice (for salad)
08 - 6 radishes, sliced into thin strips
09 - 1/4 cup fresh mint leaves, minced
10 - 1/2 cup parsley leaves, finely chopped
11 - 4 scallions, cut into thin rings
12 - Half a savoy cabbage, shredded finely

# Instructions:

01 - Chop the cabbage in half from top to bottom with a saw-tooth knife. Shred the soft green parts thinly as you move toward the stem. Toss out any hard, chunky parts. Use your hands to fluff up the cabbage in a large bowl.
02 - Dump the scallions, radish sticks, mint, and parsley into the bowl of cabbage. Sprinkle 3 tablespoons of lemon juice on top and let it sit for a bit.
03 - Toss the garlic and some salt into a food processor, blending till it’s paste-like. Slowly pour in 3 tablespoons of lemon juice, then drizzle in olive oil until creamy and smooth. Add the honey and lemon zest, and give it another quick mix.
04 - Drizzle the dressing over the veggie mix and lightly toss everything to coat. Dish it out and enjoy right away.
