Cheesy Tortilla Bites (Print Version)

# Ingredients:

→ Base

01 - 4 Large Soft Flour Wraps (10 inch/25cm)

→ Filling

02 - 225g (8 oz) Soft Cream Cheese, room temperature
03 - 115g (4 oz) Green Chilies from a can, diced
04 - 240g (1 cup) Cheddar Cheese, grated
05 - 80g (½ cup) Red Onion, chopped tiny
06 - 80g (½ cup) Bell Pepper, minced small
07 - 3 Tablespoons Tangy Sour Cream
08 - 1 teaspoon Smoky Paprika
09 - 1 teaspoon Powdered Garlic
10 - ½ teaspoon Powdered Onion
11 - ⅛ teaspoon Spicy Cayenne

→ Dipping Sauce

12 - 120g (½ cup) Tangy Sour Cream
13 - 2 Tablespoons Fresh Basil Pesto

# Instructions:

01 - Turn your oven on to 350°F (175°C) and put some parchment on a baking tray.
02 - Grab a big bowl and throw in the soft cream cheese, those green chilies, grated cheddar, chopped red onion, tiny bell pepper bits, sour cream, and all those spices. Whip it all up with your mixer till it's nice and smooth.
03 - Split your mixture into four equal parts. Spread each part across a tortilla, making sure to cover it completely with a thin layer. Roll each one up tightly from one side.
04 - Take a serrated knife and cut each roll at a slant, making five pieces per roll. Toss the end bits. Put these little bites on your lined tray and pop them in the oven for 8 minutes. Then switch to high broil for another 5 minutes. Keep an eye on them so they don't burn!
05 - While they're cooking, mix up your dipping sauce. Just put the sour cream in a small bowl and drop the basil pesto on top.
06 - Let your tasty bites cool down a bit before moving them to a serving plate. Serve them with your pesto sour cream dip.

# Notes:

01 - Go for the block-style cream cheese instead of the soft spread kind for better results.
02 - Make sure you chop everything super small so rolling is easy.
03 - Don't press too hard with your knife when cutting or you'll squeeze all the filling out.
04 - Don't walk away during broiling time or these little guys might burn.
05 - These are pretty mild tasting. Want them spicier? Switch the green chilies for hot ones and add more cayenne.
