Cheese Veggie Protein Dish (Print Version)

# Ingredients:

01 - 2 cups reduced-fat cottage cheese
02 - 1 1/2 cups grated cheddar cheese
03 - 2 large eggs
04 - 1 cup chopped broccoli florets
05 - 1 cup diced bell peppers (whatever color you like)
06 - 1/2 cup chopped onion
07 - 1/2 cup small-cut zucchini
08 - 1/4 cup freshly grated Parmesan
09 - 1 teaspoon garlic powder
10 - 1 teaspoon dried basil
11 - 1/2 teaspoon dried oregano
12 - Salt and pepper as needed
13 - 1 tablespoon olive oil for the pan

# Instructions:

01 - Get your oven going at 190°C. Coat a 23×23-cm dish with olive oil.
02 - Grab a big bowl and mix cottage cheese with eggs and all the seasonings until everything's nice and smooth.
03 - Mix in your cheddar, Parmesan and all those colorful veggies you've cut up.
04 - Dump this whole mix into your oiled dish and smooth it out flat.
05 - Pop it in the oven for about 30-35 minutes until it's golden on top and fully set.
06 - Let it sit for a bit before you cut and dish it up.

# Notes:

01 - Feel free to swap in different veggies like spinach, mushrooms or tomatoes if you want.
02 - To make it heartier, throw in some cooked ground turkey or chicken.
03 - Great for prepping ahead and keeps in the fridge for 4 days.
