Warm up a skillet on medium heat and break apart the ground beef into smaller bits as it cooks. Stir occasionally and cook for 5 to 7 minutes until the meat is fully browned. Drain off any grease so your bombs won’t get soggy. Toss in the garlic and let it cook with the beef for 1-2 minutes until you catch that wonderful aroma. Let the mixture cool a little so it won't mess with the dough when you wrap it.

While the beef cools, cut your cheeses if needed. Make sure the cheddar is around 1/2-inch cubes to give you those melty cheese pulls! Open up the biscuit dough and pull apart the pieces. Stretch each biscuit gently with your fingers into a circle about 4 inches wide. They don’t need to be perfect but should hold the filling snugly.

Spoon a generous amount of the beef mix onto the center of a flattened biscuit. Add a cheddar cube and a sprinkle of Parmesan on top. Carefully fold up the dough around the stuffing, pinching along the edges so nothing leaks out during baking. Roll each piece lightly between your hands into a round ball. Place every ball seam-side down on a parchment-covered baking sheet.

Set your oven to heat up to 375°F (190°C). Once all the bombs are arranged on the tray, use a pastry brush to coat them generously with melted butter. Sprinkle parsley on if you’re using it - it’ll make them look fancy! Pop the tray in your oven and bake for about 15 to 18 minutes, or until the dough turns golden and puffy.

Let the beef bombs cool for a short 3-5 minutes; the insides will be super hot! Move them onto a plate and enjoy them while they’re still warm and gooey. People won’t stop smiling after the first bite of these delicious bites!
