Cheese Crunchy Chicken Tacos (Print Version)

# Ingredients:

→ Tacos

01 - 2 tablespoons regular cooking oil
02 - 1 pound ground turkey, chicken, or beef
03 - 1 diced yellow onion
04 - 2 teaspoons smoky chipotle powder
05 - 1 teaspoon cumin powder
06 - 1 teaspoon powdered garlic
07 - ¾ cup red taco sauce
08 - 1 teaspoon table salt
09 - 2 cups grated taco cheese blend
10 - 12 soft corn or flour wraps
11 - 1 ½ sliced hot peppers

→ Green Dipping Sauce

12 - 1 ripe avocado
13 - ⅓ cup green salsa
14 - ¼ cup tangy Greek yogurt or cream
15 - 3 tablespoons fresh lime squeeze
16 - 2 teaspoons sweet syrup
17 - ⅓ cup chopped cilantro leaves

# Instructions:

01 - Warm up oil in your big pan on high. Toss in your meat with onions. Break up chunks while stirring until everything turns brown, usually takes 5 minutes. Mix in your smoky powder, cumin, garlic stuff, and salt. Pour in your red sauce. Turn heat down to medium and let bubble until sauce gets thicker around the meat bits. This takes about 5 minutes too. Then take it off the stove.
02 - Throw all your sauce stuff in a blender and whizz until smooth. Add a pinch of salt to taste.
03 - Scoop some meat and sprinkle cheese on one half of each wrap. Don't stuff them too full. Fold the wrap over to close. Do this again with all your wraps and fillings.
04 - Get another pan hot on medium. Line up 2-3 hot pepper slices in the pan. Sprinkle about 1/3 cup cheese in a circle roughly 3-4 inches across. Set a taco on one edge of the cheese. Let it cook 3-5 minutes. When cheese starts getting crispy underneath, use your spatula to wrap the cheese around the taco. Keep cooking another 3-4 minutes until it's crispy all around.
05 - Give folks their tacos while hot with the green sauce and any extra toppings they want.
