Crunchy Pizza Cheese Bites (Print Version)

# Ingredients:

01 - 2 cups grated mozzarella
02 - 12 pieces pepperoni
03 - 1/2 teaspoon dried Italian herbs

04 - Low-carb pizza dipping sauce

# Instructions:

01 - Turn your oven on to 375°F (190°C). Put some parchment paper on a cookie sheet so nothing sticks.
02 - Drop spoonfuls of mozzarella (about 1-2 tablespoons each) onto your lined sheet. Press them down a bit to make flat circles. Keep them an inch apart because they'll spread while cooking.
03 - Scatter some Italian herbs over each cheese circle. Put a pepperoni slice right in the middle of each one.
04 - Stick the tray in your hot oven and let them cook around 12 minutes. Keep an eye on them near the end. They're done when the edges look golden brown.
05 - Take the tray out and give the chips a few minutes to cool down. They'll get nice and crispy as they cool.
06 - Move your chips to a plate and eat them while they're fresh for the best crunch. Try them with some low-carb pizza sauce if you want something to dip them in.
