Pour water that's warm (110°F) into a big bowl. Add the sugar and stir it in. Sprinkle the yeast over the top and wait 5 minutes until you see it foam up and smell a little—then you know the yeast is alive and ready!

Throw the flour, salt, and olive oil into your bubbly yeast mixture. Work the dough by kneading it until it feels smooth and springy—takes about 7-10 minutes. Pop it in a greased bowl, cover it with a towel, and leave it somewhere warm to rise for an hour until it's doubled in size.

After your dough has puffed up, flour your surface and flatten it out into a rectangle about ¼ inch thick. Smear on the pizza sauce, spreading it nearly to the edges. Toss on the mozzarella, then scatter pieces of pepperoni and any other toppings you’re using.

Roll the dough into a log shape starting on the long side, like you're making cinnamon buns. Slice it into 12 even sections using a serrated knife or dental floss. Set the rolls, cut-side up, in a greased baking pan.

Cover the rolls and leave them for another 30 minutes so they rise again while your oven heats to 375°F. Bake them for about 25 minutes until they look fluffy and slightly golden on the surface.

After baking, give the rolls a few minutes to cool. Heat up some extra marinara for dipping and dig in while they’re still warm and the cheese is melted!
