# Ingredients:

01 - 1 teaspoon salt
02 - ¼ cup green onion, diced
03 - ½ cup sour cream
04 - ¼ cup bacon, diced
05 - ½ teaspoon pepper
06 - 3 russet potatoes, cooked and cubed
07 - 1 block cheddar cheese, cut into strips

→ Coating

08 - Egg for coating
09 - 100 g panko breadcrumbs
10 - Flour for coating
11 - ⅔ cup cornstarch

→ Frying

12 - 1 litre canola, peanut, or vegetable oil

# Instructions:

01 - Mash cooked potatoes together with green onions, sour cream, bacon, salt, and pepper into a slightly lumpy texture.
02 - Shape the potato mix by wrapping it over cheese strips into small balls. Ensure every piece of cheese is hidden within.
03 - Dip each cheese-covered ball in flour first, then into a beaten egg, and finish with a mix of panko and cornstarch.
04 - Warm up your oil to 350°F, fry the potato-cheese balls for 3 minutes until crispy and golden. Let them drip excess oil on paper towels.

# Notes:

01 - Bake them at 400°F for about 15 minutes if you prefer to skip frying.
02 - Chill the formed sticks in the fridge for half an hour to keep their shape better when cooking.
03 - Swap cheddar for mozzarella or pepper jack, if you'd like.
