Stir the salt, paprika, onion powder, garlic powder, chili powder, and cayenne (optional) together in a small dish so it's ready to sprinkle on after frying.

Fill a deep pot with about 3 inches of oil and heat to 350°F (180°C). Fry the frozen fries for 6-8 minutes till they turn golden. Drain on paper towels to soak up extra grease.

Break the cheese slices into pieces and put them in a microwave bowl with the milk and pickle brine. Zap it in short bursts of 30 seconds, stirring each time, until it's smooth and runny.

Shake the fries in a big bowl with your seasoning mix to coat them nicely. Serve with the warm cheese sauce for dipping right away.
