Spicy Seasoned Fries Cheese (Print Version)

# Ingredients:

→ Seasoning Mix

01 - 2 tablespoons paprika
02 - 2 teaspoons salt
03 - 2 teaspoons chili powder
04 - 1 teaspoon onion powder
05 - 1 teaspoon garlic powder
06 - A pinch of cayenne pepper (optional)

→ Cheese Sauce

07 - 16 slices of American cheese
08 - 1 tbsp jalapeño jar brine
09 - 1/4 cup of milk

→ Fries

10 - 1 lb Ore-Ida frozen crispy fries
11 - Vegetable oil for frying

# Instructions:

01 - Stir the salt, paprika, onion powder, garlic powder, chili powder, and cayenne (optional) together in a small dish so it's ready to sprinkle on after frying.
02 - Fill a deep pot with about 3 inches of oil and heat to 350°F (180°C). Fry the frozen fries for 6-8 minutes till they turn golden. Drain on paper towels to soak up extra grease.
03 - Break the cheese slices into pieces and put them in a microwave bowl with the milk and pickle brine. Zap it in short bursts of 30 seconds, stirring each time, until it's smooth and runny.
04 - Shake the fries in a big bowl with your seasoning mix to coat them nicely. Serve with the warm cheese sauce for dipping right away.

# Notes:

01 - Use a thermometer to keep oil temp steady for crunchier fries.
02 - Reheat the cheese dip in the microwave briefly if it hardens.
03 - Cut back on cayenne if you like less heat.
