Cheesy Zucchini Bake (Print Version)

# Ingredients:

→ Proteins

01 - 1 lb of turkey, ground
02 - 2 large eggs

→ Cheeses

03 - 1/4 cup of parmesan cheese, finely grated
04 - 2 cups of shredded mozzarella

→ Vegetables

05 - 1 yellow onion, diced
06 - 1 chopped bell pepper
07 - 4 cloves of garlic, finely chopped
08 - 4 medium zucchini, shredded

→ Seasoning and Oil

09 - 1 tablespoon of olive oil
10 - 1 tablespoon of Italian seasoning, split into portions
11 - 1/2 teaspoon of onion powder
12 - 1/2 teaspoon of ground black pepper
13 - 2 cups of marinara sauce

# Instructions:

01 - Add a bit of olive oil to a frying pan and warm it up over medium heat.
02 - Put the zucchini mixture into a greased 9x13 pan, press it down, and bake for about 20 minutes.
03 - Grate the zucchini, press it into a colander, and squeeze out water using the back of a spoon.
04 - Mix zucchini, eggs, black pepper, onion powder, parmesan cheese, and a little bit of Italian seasoning in a bowl.
05 - Turn the oven on and set it to 400°F.
06 - Cook the onion and bell pepper in the skillet until they're tender and the onion looks clear.
07 - Toss the garlic into the pan and stir it around for 60 seconds.
08 - Cook the turkey in the skillet until it's browned, then pour in the marinara sauce and the rest of the Italian seasoning.
09 - Take the zucchini crust out of the oven, spread the sauce mix over it, and layer the mozzarella and leftover Italian seasoning on top.
10 - Pop the dish back into the oven for another 20 minutes to melt the cheese and finish it off.

# Notes:

01 - You’ll get about 4 cups of shredded zucchini from four medium-sized ones. Be sure to pack the shreds tightly in your cup!
02 - Red bell peppers have more vitamin C and beta carotene than the green ones.
