Set your oven to 375℉. Put parchment paper on a big baking sheet with edges.

Grab your mini food processor and throw in the cottage cheese. Pulse it a few times until it's nice and smooth.

Dump the smooth cottage cheese into a big bowl. Add flour, baking powder, salt, olive oil, chopped spinach, and mozzarella. Stir until you get a dough. Roll it into a thick log about 6 inches long.

Cut the log into 6 even pieces. Press each one into a flat circle and make a hole in the middle with your finger.

Put your circles on the baking sheet. Brush some beaten egg on top and pop them in the oven for 22-25 minutes until they turn golden brown.

Move your baked goods to a wire rack and let them cool all the way.
