Spinach Cheese Rounds (Print Version)

# Ingredients:

→ Dough Mix

01 - 1 cup cottage cheese
02 - 1 cup + 2 tablespoons all-purpose flour
03 - 3 teaspoons baking powder
04 - 1/2 teaspoon salt
05 - 1 tablespoon olive oil
06 - 2 ounces baby spinach, chopped finely
07 - 1/2 cup mozzarella cheese, shredded

→ For Brushing

08 - 1 egg, beaten lightly

# Instructions:

01 - Set your oven to 375℉. Put parchment paper on a big baking sheet with edges.
02 - Grab your mini food processor and throw in the cottage cheese. Pulse it a few times until it's nice and smooth.
03 - Dump the smooth cottage cheese into a big bowl. Add flour, baking powder, salt, olive oil, chopped spinach, and mozzarella. Stir until you get a dough. Roll it into a thick log about 6 inches long.
04 - Cut the log into 6 even pieces. Press each one into a flat circle and make a hole in the middle with your finger.
05 - Put your circles on the baking sheet. Brush some beaten egg on top and pop them in the oven for 22-25 minutes until they turn golden brown.
06 - Move your baked goods to a wire rack and let them cool all the way.
