Effortless Potsticker Soup (Print Version)

# Ingredients:

→ Base of the Soup

01 - 2 teaspoons freshly grated ginger
02 - 4 cups vegetable or chicken stock
03 - 1 tablespoon sesame oil
04 - 2 garlic cloves, minced
05 - 1 tablespoon soy sauce

→ Main Ingredients

06 - 1/2 cup bok choy or spinach
07 - 12-15 frozen dumplings
08 - 1/2 cup mushrooms, sliced

→ Seasonings & Toppings

09 - Salt and black pepper as needed
10 - 1 tablespoon rice vinegar
11 - 1 teaspoon chili oil or a sprinkle of chili flakes
12 - 2-3 green onions, finely chopped

# Instructions:

01 - Heat sesame oil in a large pot until it’s warm and fragrant. Toss in the minced garlic and grated ginger, stirring just a bit to wake up their flavors. Wait a minute or two while the smell takes over your kitchen.
02 - Stir in your soy sauce, add the broth, and pour in rice vinegar if you choose to include it. Let this sit over low heat for 5-10 minutes. It’ll give the broth time to soak up all those goodies.
03 - Carefully drop your frozen dumplings into the hot soup. Let them cook for about 5-7 minutes. At the very end, sprinkle in your mushrooms and greens. They’ll soften perfectly in the heat of the broth.
04 - Taste your soup and adjust with salt, pepper, and, if you’re feeling bold, some chili oil. Dish into bowls and pile on the garnish with green onions and a drizzle of extra sesame oil.

01 - Making it extra hearty? Toss in some noodles of your choice.
02 - Want a richer flavor? Just add a splash of tamari or even fish sauce.
03 - Great for chilly nights or when you’re feeling under the weather.
