Heat your oven to 350°F (175°C). Grab a baking sheet and cover it with parchment paper sprayed with oil.

Use a fine mesh strainer or cheesecloth to drain extra moisture from the cottage cheese.

Scoop small piles of cheese onto your baking sheet. Press each one flat, leaving space so they don't touch.

Cook for about 20-25 minutes until they're crispy and golden. Leave them on the sheet to cool and crisp up some more.

Spread out the drained cheese over some oiled parchment. Microwave for 2-3 minutes until crunchy. Let it cool, then break into smaller pieces.
