01 - 2-3 jalapenos, chopped with seeds removed
02 - 4 cups pepper jack cheese, finely shredded
03 - 1 cup of milk
04 - 1 and 1/2 cups breadcrumbs
05 - 1 large egg
06 - 1/2 cup plain flour
07 - 1 teaspoon of garlic powder
08 - Paprika powder, 1 teaspoon
09 - Oil, for frying your bites
10 - 1 teaspoon cayenne pepper for a kick

# Instructions:

01 - Mix up the shredded cheese along with the diced jalapenos in a big bowl.
02 - Roll the mixture into small balls, about 1.5 inches wide. Set them in the freezer for at least 30 minutes (up to an hour).
03 - Get your oil ready in a deep frying pot, heating it to around 350°F.
04 - Put together the breadcrumbs, garlic powder, paprika, and cayenne pepper inside another bowl.
05 - Grab three bowls: one holds the flour, another combines the egg and milk, and the third has the seasoned breadcrumbs.
06 - First roll the balls in the flour, next dunk them into the egg and milk mix, and finally coat them with the breadcrumbs.
07 - Cook a handful of your coated balls for about 3-4 minutes until you see them golden and crispy.
08 - Let the fried bites sit on paper towels for a bit to soak up the oil before you dig in.

01 - An oil thermometer can help you keep the heat right at 350°F.
02 - Cheddar or Monterey Jack cheese can be swapped in if you're not into spicy.
03 - Freezing helps keep the balls in shape while frying. Don't skip this!
