Green Onion Shao Bing (Print Version)

# Ingredients:

→ Dough

01 - 175 g warm water
02 - 3 g instant yeast (use 4 g if it's chilly)
03 - 300 g plain flour

→ Filling

04 - ½ teaspoon salt
05 - Dash of Chinese 5-spice powder
06 - 150 g finely minced scallions (about 5.5 oz)

→ Wash and Coating

07 - Raw sesame seeds (white, for coating)
08 - 2 tablespoons maple syrup
09 - 1 tablespoon oat milk

→ Oil Paste

10 - 4 tablespoons cooking oil
11 - 3 tablespoons plain flour

# Instructions:

01 - Combine warm water and yeast in a bowl filled with flour. Use chopsticks to mix until all flour is incorporated. Knead gently by hand into a smooth dough. Cover tightly with a damp towel and a lid. Leave it to rise until it puffs up to about 1.5 times its size, which will take 30-35 minutes.
02 - Place flour in a small bowl. Heat cooking oil in a pan until you see bubbling when you dip in the end of a chopstick. Carefully pour the heated oil into the flour while stirring constantly. Mix until it forms a creamy paste. Leave to cool slightly.
03 - Sprinkle a thin layer of flour on your working area. Move the risen dough to the surface and roll it into a thin sheet about 16x10 inches (or roughly 3 mm thick). Apply two-thirds of the oil paste evenly on the dough, then scatter half the scallions on top. Press lightly to make sure they stick.
04 - Bring the bottom edge of the dough up to cover the green onions. On the exposed dough surface, spread out the rest of the oil paste and sprinkle the remaining scallions over it. Fold the top part of the dough down to form a layered piece and pinch around the edges to seal. Turn it upside down so the seam side faces down.
05 - Mix the maple syrup with oat milk in a small container. Use a brush to evenly spread the liquid across the top of the dough. Generously sprinkle sesame seeds over the surface for a nice coating.
06 - Slice the dough into 6 equal pieces using a serrated knife. Place each piece at least an inch apart on a baking sheet lined with parchment paper.
07 - Preheat your oven to 475°F (245°C). Cook the dough portions for 12 minutes until they turn golden. When you tap the baked dough, it should sound hollow, and the inside should be completely cooked. Serve right away, plain or with your favorite extra filling.

# Notes:

01 - Use a kitchen scale for precise measuring.
02 - Untoasted sesame seeds look better on top, but toasted ones work if you’re careful not to let them scorch.
03 - For a less sweet coating, lower the maple syrup to 1 tablespoon and add 2 tablespoons of plant milk.
04 - Lining your tray with parchment paper helps with cleanup later and avoids sticking.
