Preheat oven to 220°C.

Pat chicken tenderloins dry and season both sides with salt, black pepper, and garlic powder.

In a bowl, beat egg with milk. In a separate bowl, combine breadcrumbs and grated Parmesan cheese.

Dip each tenderloin first into the egg mixture, letting excess drip off, then coat in the breadcrumb-Parmesan mixture, pressing to adhere.

Place breaded tenderloins on a baking sheet coated with non-stick cooking spray.

Lightly spray the tops with olive oil or avocado oil spray. Bake for 8 minutes, then turn pieces over and bake for 5 minutes more.

Remove from the oven. Spoon a portion of marinara sauce over each tenderloin and top with half a mozzarella slice.

Return to oven for 2–3 minutes until cheese has melted.

Garnish with parsley and serve with additional marinara sauce if desired.
