Effortless Truffle Oxtail Pizza (Print Version)

03 - 1 tbsp Garlic Paste (Gourmet Garden)
04 - 3 tbsp Gravy Browning Sauce (Master)
05 - 4 sprigs of fresh Thyme
06 - 1/2 chopped Onion
07 - 4 lbs of Oxtail, cut into pieces
08 - 2 cups high-quality Beef Stock (Swanson's)
09 - 1 tbsp Ginger Paste
10 - 1/2 of a Korean Pear, diced
11 - 4 tbsp Busha Browne Jerk Seasoning
12 - 1/2 cup of sliced Scallions
13 - 1 tbsp Liquid Smoke

14 - Ready-to-use or homemade Pizza Dough
15 - 1 cup of shredded Mozzarella Cheese

# Instructions:

01 - To kick things off, braise the oxtail using my go-to method. Once it’s cooked and cooled slightly, tear the tender meat by hand into small pieces. Set aside in a big mixing bowl.
02 - Grab the thick gravy left from the braised oxtail. Mix that juicy broth and marinade into your sauce base—it’s going on the pizza soon!
03 - Use a good-quality dough, either from scratch or store-bought. Roll it thin onto a pizza stone, giving it around 5–10 minutes to rest and rise a little before assembly.
04 - Crank your oven up to 550°F. Spread the rich oxtail gravy evenly over the rolled-out dough, leaving a small uncovered edge. Add mozzarella across the top, followed by the pulled oxtail pieces. Brush the edges with truffle oil and bake for about 8–12 mins until the crust becomes golden and cheese bubbles.
05 - Once the pizza’s out of the oven, drizzle on a little more truffle oil for extra flavor. Want to spice things up? Try a splash of Sriracha or your hot sauce of choice before digging in!
