Start by warming up olive oil in a large frying pan on medium heat. Toss in the onion and bell pepper and cook for around 5 minutes, stirring often, until they're softened and smell amazing.

Add the minced garlic and turkey to the softened veggies. As it cooks, crumble the turkey with a spoon, and stir until it's fully browned, which should take about 7 or 8 minutes.

Pour in the tomato sauce, mustard, ketchup, brown sugar, Worcestershire sauce, chili powder, and a bit of salt and pepper. Stir it all together and bring it to a gentle simmer.

Turn the heat down low and let the mixture bubble gently for 5 to 10 minutes. Stir at times so nothing sticks. You'll see the sauce thicken as the flavors come together.

Toast your buns if you'd like, then spoon the turkey mixture onto the bottom buns. Add parsley on top if you're using it, cover with the other bun half, and dig in while it's warm!
