Stir together ricotta, feta, and thyme until smooth and blended.

Take a strip of phyllo, brush it with oil, add filling, fold both ends inward, then roll up tightly. Lay them seam-down on a tray.

Bake at 400°F for 15-20 minutes, brushing the tops with more oil if needed, until crisp and golden.
