Greek Feta Phyllo Rolls (Print Version)

# Ingredients:

→ For the Filling

01 - 1 cup ricotta cheese
02 - 8 oz crumbled feta cheese
03 - 1 teaspoon fresh thyme (optional)
04 - ¼ cup olive oil or melted butter
05 - 6 sheets phyllo dough, cut lengthwise in half

→ For the Spicy Honey Topping

06 - ½ teaspoon red chili flakes
07 - ¼ cup honey

# Instructions:

01 - Stir together ricotta, feta, and thyme until smooth and blended.
02 - Take a strip of phyllo, brush it with oil, add filling, fold both ends inward, then roll up tightly. Lay them seam-down on a tray.
03 - Bake at 400°F for 15-20 minutes, brushing the tops with more oil if needed, until crisp and golden.
04 - On low heat, warm the honey and chili flakes together for a minute or two to bring out the spice.

# Notes:

01 - Cover phyllo with a damp towel to keep it from drying out.
02 - You can prep the rolls in advance and refrigerate before baking.
03 - Swap out ricotta for cream cheese or goat cheese, if you'd like.
