Flaky Croissant Breakfast Boats (Print Version)

# Ingredients:

01 - 4 jumbo croissants
02 - 3 eggs
03 - 2 tablespoons milk
04 - 1/2 cup grated cheddar cheese
05 - 3-5 bacon strips, diced
06 - 3 tablespoons finely diced chives or green onions

# Instructions:

01 - Warm oven to 375°F. Coat a baking tray with oil spray or cover it with parchment paper.
02 - Cut out most of the top portion from each croissant, making sure to keep an edge all around the bottom to form a boat-like container.
03 - Whisk eggs and milk together in a bowl. Add your grated cheese, diced bacon, and chopped chives or green onions.
04 - Pour the egg mixture into your hollowed croissants. Put them on your baking tray and cook for around 22 minutes until they're golden and the egg mix has firmed up.

# Notes:

01 - Pair with fresh fruit or tomato slices for a lighter option, or warm up quickly in the microwave when you're rushing out.
02 - Planning ahead? Let them cool totally, then store in the fridge with a paper towel on top for up to 2-3 days.
03 - Want to freeze them? After cooling, place in a zip-lock freezer bag with a paper towel covering the tops and keep frozen up to 3 months. Let sit for 15-30 minutes before warming up.
