Warm oven to 375°F. Coat a baking tray with oil spray or cover it with parchment paper.

Cut out most of the top portion from each croissant, making sure to keep an edge all around the bottom to form a boat-like container.

Whisk eggs and milk together in a bowl. Add your grated cheese, diced bacon, and chopped chives or green onions.

Pour the egg mixture into your hollowed croissants. Put them on your baking tray and cook for around 22 minutes until they're golden and the egg mix has firmed up.
