Blueberry Cottage Cheese Bake (Print Version)

# Ingredients:

→ Base

01 - 2 large eggs
02 - 1/4 cup maple syrup or honey
03 - 1 cup cottage cheese
04 - 1/4 cup milk

→ Seasonings

05 - 1/4 teaspoon salt
06 - 1 teaspoon vanilla extract
07 - 1/2 teaspoon ground cinnamon

→ Dry Ingredients

08 - 1 cup fresh or frozen blueberries
09 - 1/2 cup old-fashioned rolled oats
10 - 1/2 teaspoon baking powder

→ Optional Toppings

11 - Powdered sugar
12 - Maple syrup or honey
13 - Additional fresh blueberries

# Instructions:

01 - Set your oven to 350°F and grease an 8x8 pan to keep things from sticking.
02 - Blend together the cottage cheese, eggs, milk, sweetener, vanilla, cinnamon, and salt until well combined.
03 - Add the oats and baking powder, then gently stir in the blueberries so they don't squish.
04 - Pour everything into the pan, scatter some extra berries on top, and bake 30-35 minutes until firm.
