French Dip Slow Cooker (Print Version)

# Ingredients:

01 - 2 pounds chuck beef
02 - 1 onion, chopped
03 - 4 cloves garlic, crushed
04 - 1 cup beef stock
05 - 1 cup onion soup
06 - 1 tablespoon Worcestershire sauce
07 - 1 teaspoon dried thyme leaves
08 - 1 teaspoon dried rosemary leaves
09 - Salt and pepper for seasoning

10 - 4 large sub rolls
11 - 8 slices provolone
12 - Fresh parsley, chopped for topping

# Instructions:

01 - Get a big pan really hot over medium-high heat. Season your beef chunk all over with salt and pepper. Throw it in the hot pan and brown each side until it's got a nice crust, about 3-4 minutes per side. This step makes everything taste better.
02 - Dump your chopped onions and crushed garlic at the bottom of your slow cooker. They'll make a tasty bed for the meat.
03 - Lay your browned beef on top of that onion and garlic mixture.
04 - In a bowl, stir together the beef stock, onion soup, Worcestershire sauce, thyme and rosemary. Pour this liquid all over your meat.
05 - Put the lid on and cook on low for 8 hours or high for 4 hours. You'll know it's done when you can easily pull it apart.
06 - Take the meat out and put it on a cutting board. Use two forks to shred it into small, bite-sized pieces.
07 - Strain the cooking liquid to get rid of the chunks. This gives you a smooth dipping sauce. Keep it warm.
08 - Cut open your rolls and stuff them with the shredded beef. Top each one with 2 slices of cheese.
09 - You can stick the sandwiches under a broiler for a couple minutes until the cheese gets all bubbly, or use a sandwich press if you've got one.
10 - Put your sandwiches on plates with small bowls of the warm juice for dipping. Sprinkle some parsley on top to make them look fancy.
