Get a big pan really hot over medium-high heat. Season your beef chunk all over with salt and pepper. Throw it in the hot pan and brown each side until it's got a nice crust, about 3-4 minutes per side. This step makes everything taste better.

Dump your chopped onions and crushed garlic at the bottom of your slow cooker. They'll make a tasty bed for the meat.

Lay your browned beef on top of that onion and garlic mixture.

In a bowl, stir together the beef stock, onion soup, Worcestershire sauce, thyme and rosemary. Pour this liquid all over your meat.

Put the lid on and cook on low for 8 hours or high for 4 hours. You'll know it's done when you can easily pull it apart.

Take the meat out and put it on a cutting board. Use two forks to shred it into small, bite-sized pieces.

Strain the cooking liquid to get rid of the chunks. This gives you a smooth dipping sauce. Keep it warm.

Cut open your rolls and stuff them with the shredded beef. Top each one with 2 slices of cheese.

You can stick the sandwiches under a broiler for a couple minutes until the cheese gets all bubbly, or use a sandwich press if you've got one.

Put your sandwiches on plates with small bowls of the warm juice for dipping. Sprinkle some parsley on top to make them look fancy.
