Fried Mozzarella Sandwich Magic (Print Version)

# Ingredients:

01 - 1 ball (approximately 120g) mozzarella cheese
02 - 4 squares of white bread with edges trimmed off
03 - 150 ml milk
04 - 2 eggs
05 - A pinch of salt and a sprinkle of pepper
06 - 5 tbsp plain flour
07 - Sunflower oil, enough for shallow frying

# Instructions:

01 - Crack the eggs into a bowl and mix in milk, salt, and pepper. Pour the flour onto a separate plate and set aside for later use.
02 - Cut mozzarella into even slices. Lay them on two slices of trimmed bread, making sure they don't stick out past the edges.
03 - Top each mozzarella-covered slice of bread with another piece to complete the sandwich. Cut each into neat triangles by slicing diagonally.
04 - First, press each triangle into the flour so the edges are fully dusted. Then quickly dip them into the egg mixture. Make sure they're fully covered.
05 - Pour sunflower oil into a frying pan so it's about 1/4 inch deep. Make sure the oil is hot enough (a small bread piece should bubble and float). Fry the sandwiched triangles until both sides are crispy and golden.
06 - Move the fried sandwiches onto some paper towels to soak up the excess oil. Give them a minute to cool before digging in.

03 - You can swap or add fillings like roasted veggies, prosciutto, sun-dried tomatoes, or anchovies for extra flavor.
