Crack the eggs into a bowl and mix in milk, salt, and pepper. Pour the flour onto a separate plate and set aside for later use.

Cut mozzarella into even slices. Lay them on two slices of trimmed bread, making sure they don't stick out past the edges.

Top each mozzarella-covered slice of bread with another piece to complete the sandwich. Cut each into neat triangles by slicing diagonally.

First, press each triangle into the flour so the edges are fully dusted. Then quickly dip them into the egg mixture. Make sure they're fully covered.

Pour sunflower oil into a frying pan so it's about 1/4 inch deep. Make sure the oil is hot enough (a small bread piece should bubble and float). Fry the sandwiched triangles until both sides are crispy and golden.

Move the fried sandwiches onto some paper towels to soak up the excess oil. Give them a minute to cool before digging in.
