Parmesan Garlic Sweet Potatoes (Print Version)

01 - 4 tablespoons olive oil
02 - 1/4 cup Parmesan cheese, freshly grated
03 - 6 garlic cloves, finely chopped
04 - 4 medium-sized sweet potatoes, peeled and diced

05 - Salt and a few cracks of black pepper, to taste
06 - 1 tablespoon fresh parsley, roughly chopped for topping
07 - 1 tablespoon dried thyme
08 - 1 tablespoon dried oregano

# Instructions:

01 - Set your oven to 400°F (200°C) and let it heat up. This helps the sweet potatoes caramelize perfectly.
02 - In a big bowl, toss together the sweet potato cubes, olive oil, minced garlic, dried thyme, oregano, salt, and pepper. Make sure everything gets a nice coating of the oil and spices.
03 - Cover a baking tray with parchment paper to stop sticking and make cleanup a breeze. Arrange the seasoned sweet potatoes so they’re spread out evenly, leaving some space around each piece.
04 - Pop the tray in your hot oven and roast the sweet potatoes for around 25 minutes. They should soften and start getting that golden color.
05 - Pull the tray out and sprinkle a layer of grated Parmesan cheese over the sweet potatoes for extra flavor.
06 - Put the tray back in the oven for another 10-15 minutes. You’re looking for crisp, golden edges and tender centers.
07 - Move the roasted sweet potatoes to your favorite serving dish and scatter some fresh chopped parsley on top for a fresh, colorful touch.
