Turn your oven to 180°C (356°F) so it's ready to bake when the cookies are prepared.

Take the softened butter and sugar and mix them well in a bowl until they’re fluffy and well-blended. This will give the cookies their buttery base.

Add the rest: toss in the flour, baking powder, vanilla, and honey (or golden syrup for a more caramel-like touch). Blend everything together until you have a smooth dough that holds its shape.

Split the dough into three pieces. Use your hands to roll each piece into a cylinder. They don’t need to be perfect, just smooth and even.

Line a baking tray with non-stick paper and place the dough rolls on it. Make sure to leave lots of space between them as the dough spreads while cooking.

Slightly flatten the dough rolls with your fingertips, then bake in the oven for 12-14 minutes until they’re lightly golden.

Don’t wait for the cookies to cool! While they’re still warm and soft, carefully slice them diagonally into pieces. If you wait too long, they might crack.
