Switch your fan oven to 180°C (320°F) and let it warm up.

Pop butter into a microwave-safe jug and melt it in quick short bursts. Let it cool, mix in the olive oil, and set aside for later.

Take one filo sheet and lay it out flat. Brush it lightly with the butter mixture, add another layer on top, and repeat the brushing.

Put a piece of feta cheese closer to one end of the filo. Fold partway over the cheese, brush with more butter, and roll it almost closed. Finish by brushing the edge and pressing to seal it up.

Use a sharp knife to cut the pastry ends into neat triangles. Brush all the edges with butter and fold them securely around the cheese.

Lay the feta parcels on a tray, brush them with extra butter, sprinkle some sesame seeds on top, and cook for about 15 minutes until golden.

While still warm, drizzle with a bit of honey and finish with more sesame seeds for garnish.
