Honey Orange Ginger Cakes (Print Version)

# Ingredients:

01 - 1 tablespoon freshly grated ginger
02 - 1/4 cup vegetable oil
03 - 1 teaspoon vanilla extract
04 - 2 large eggs
05 - 1/4 cup honey
06 - 1/4 cup freshly squeezed orange juice
07 - 1 tablespoon orange zest
08 - 1 cup all-purpose flour
09 - 1/2 teaspoon ground ginger
10 - 1/4 teaspoon salt
11 - 1/4 teaspoon baking soda
12 - 1/2 teaspoon baking powder
13 - 1/4 teaspoon ground cinnamon

# Instructions:

01 - Set your oven to 350°F (175°C). Coat your pans with grease and dust with flour, or use parchment paper for easy removal later.
02 - Grab a medium-sized bowl and whisk together your flour, salt, cinnamon, baking soda, baking powder, and ginger. Set it aside for now.
03 - In another bowl, stir together the honey, eggs, orange zest, orange juice, oil, and vanilla. Toss in the freshly grated ginger for extra flavor if you'd like.
04 - Carefully mix the wet ingredients into the bowl with the dry stuff. Stir gently until just blended. Don’t overdo it if you want soft cakes.
05 - Pour the batter evenly into your pans. Give the pans a little tap to settle the mixture before baking.
06 - Slide the pans into the oven and bake for about 40 to 50 minutes. Check with a toothpick—it should come out clean. Your cakes will look golden and feel bouncy.
07 - Once out of the oven, let the cakes rest in their pans for 10 minutes. Then move them onto a wire rack to cool completely.
