Get your oven hot at 475°F (245°C). Pop your pizza stone in while it's warming up if you're using one.

Fry up your chorizo bits in a pan on medium-high until they're crisp and brown. Tip out the extra grease.

Stretch out your pizza dough on a floured counter until it's as thin as you want, then move it to a parchment-lined tray or pizza paddle.

Smear the tomato topping all over the dough but leave a little edge around the outside.

Scatter your cooked chorizo bits evenly across the sauce.

Sprinkle both cheeses over the meat, then add your peppers and onions on top.

Put your pizza in the hot oven, either on the stone or the baking tray. Let it cook for 12-15 minutes until the edges turn golden and the cheese gets bubbly.

Take it out and let it sit for a minute. Scatter fresh cilantro all over before cutting.

Cut into slices and eat while it's hot.
