Spicy Korean Chicken Burgers (Print Version)

# Ingredients:

→ For the Spicy Chicken Burgers

01 - 1 lb ground chicken (or turkey)
02 - 3 tbsp Korean chili paste (gochujang)
03 - 2 tbsp Asian soy sauce
04 - 1 tbsp toasted sesame oil
05 - 1 tbsp natural honey
06 - 2 garlic cloves, finely chopped
07 - 1-inch chunk ginger root, shredded
08 - 1/4 cup sliced green onions
09 - 1/2 tsp ground black pepper
10 - 1/4 cup dry breadcrumbs (if needed)
11 - 1 tbsp cooking oil, for frying

→ For the Bacon Kimchi Spread

12 - 4 slices turkey bacon (or beef bacon)
13 - 1/2 cup diced kimchi
14 - 1/4 cup diced onion
15 - 2 tbsp dark brown sugar
16 - 2 tbsp mild rice vinegar
17 - 1 tbsp Asian soy sauce
18 - 1 tsp toasted sesame oil
19 - 1/2 tsp red pepper flakes (skip if too spicy)

→ For the Burger Assembly

20 - 4 soft burger buns (try brioche or potato rolls)
21 - 1/2 cup creamy mayo
22 - 1 tbsp hot sauce (skip if you want)
23 - Handful of cilantro leaves
24 - Crunchy lettuce, cucumber slices, or whatever you like

# Instructions:

01 - Get your skillet hot over medium heat. Fry turkey bacon till it's nice and crisp, around 5-7 minutes. Take it out, break it into bits, and put aside. In the same pan, cook your diced onions till they're soft and golden, about 4 minutes. Throw in the chopped kimchi and cook 2-3 minutes until it starts to brown. Mix in your brown sugar, Asian sauce, vinegar, and sesame oil. Let it bubble away for about 5 minutes, giving it a stir now and then, till it gets thick. Mix in your bacon crumbles and red pepper if you want extra kick. Keep it warm on low heat while you make the burgers.
02 - In a big bowl, throw together your ground chicken, Korean chili paste, soy sauce, sesame oil, honey, chopped garlic, shredded ginger, green onions, black pepper, and breadcrumbs if you're using them. Mix it all up gently – don't squish it too much. Split it into 4 equal chunks and shape them into patties. Heat up some oil in a big pan over medium-high heat. Cook the patties about 5-6 minutes on each side, till they're nicely browned and reach 75°C (165°F) inside.
03 - Cut your burger buns in half. Smear a bit of butter on the cut sides and toss them in the same pan or another one for 2-3 minutes till they get a nice golden color.
04 - Mix the mayo with hot sauce if you want it spicy. Spread a thick layer on the bottom bun. Put your hot chicken patty on top. Spoon a big dollop of bacon kimchi spread over the patty. Add some fresh cilantro and any other toppings you fancy. Cap it with the top bun.

# Notes:

01 - Want it gluten-free? Just swap the soy sauce for tamari and grab some gluten-free buns.
02 - You can use vegan mayo instead of regular if you're cutting back on animal products.
