Baked Ricotta Blackberry Dip (Print Version)

# Ingredients:

01 - 8 ounce full-fat ricotta cheese
02 - 4 ounce soft goat cheese, room temperature
03 - 1 large egg
04 - 1 tablespoon chopped fresh thyme, extra for topping
05 - 1 clove garlic, finely chopped
06 - grated peel from 1 lemon
07 - 1 teaspoon fresh lemon juice
08 - ½ teaspoon chunky salt
09 - ground black pepper
10 - 6 ounce fresh blackberries
11 - 2 tablespoon runny honey

# Instructions:

01 - Set your oven to 400°F.
02 - Lightly coat a 9" oval dish with cooking spray. You can swap in any shallow dish that holds at least 3 cups.
03 - Throw the ricotta, goat cheese, egg, all lemon peel, 1 tsp lemon juice, thyme, salt and a few twists of black pepper in your food processor. Run it for 2 minutes till it's silky smooth. Pour this mix into your dish.
04 - Scatter blackberries on top of your cheese mixture. Pop in the oven for 30 minutes until berries get juicy and cheese gets bubbly.
05 - Pour honey over the top and sprinkle with extra thyme and chunky salt. Enjoy with some toasted bread or your favorite crackers.
