Marinated Tomatoes Herbs (Print Version)

# Ingredients:

01 - 4 firm but ripe tomatoes, large in size
02 - 2 cloves of garlic, minced finely
03 - 1/4 portion of a small white onion, diced finely (swap with red or yellow, if desired)
04 - A small handful of fresh parsley, dill, cilantro, or basil
05 - 1/4 cup of high-quality olive oil
06 - 2 tbsp of balsamic vinegar
07 - 1 tbsp of honey
08 - A pinch of black pepper and kosher salt for seasoning

# Instructions:

01 - Cut the tomatoes into round slices about 1/3 inch thick. Chop garlic, onion, and herbs into small pieces.
02 - Stir together the chopped garlic, onion, herbs, honey, olive oil, and vinegar in a small dish.
03 - Place the tomato slices on a wide shallow tray. Sprinkle a little salt and ground pepper over them. Pour the dressing on top.
04 - Cover the tray with plastic wrap and pop it in the fridge to chill for an hour or more before enjoying.

# Notes:

01 - Choose tomatoes that are both firm and ripe for the best results.
02 - Feel free to swap fresh dill for basil if you'd like a different flavor.
03 - You can use avocado oil as a substitute for olive oil.
