Set your oven to 375°F and get a baking sheet ready with parchment paper.

Split the mozzarella slices in half and put them neatly on the sheet.

Pop them in the oven and let them melt for about 5 to 6 minutes.

Combine ricotta, your cooked sausage, and seasonings (if you're using them) in a bowl.

Pull the melted cheese out of the oven and let it cool down a bit—just a minute or two. Scoop in the ricotta mix and fold each one in half.
