Muffin Egg Breakfast Pizza (Print Version)

# Ingredients:

01 - 1 pack of split English muffins
02 - 8 fresh eggs
03 - 1 lb ground breakfast sausage
04 - 8 oz thinly cut mild cheddar cheese

→ Country Gravy

05 - 2 cups fresh milk
06 - 1/4 cup saved sausage fat or butter
07 - 1/4 cup all-purpose flour
08 - 1/2 teaspoon salt, adjust as needed
09 - 1/4 teaspoon black pepper, adjust as needed

# Instructions:

01 - Brown your breakfast sausage in a heavy cast iron pan till fully cooked. Take it out and keep just 1/4 cup of the drippings.
02 - Dump flour into the reserved drippings. Stir continuously over medium heat for about 5-10 minutes until it turns slightly golden. This gets rid of that raw flour taste.
03 - Pour milk into the pan bit by bit, keeping up the stirring. Let it bubble and get thick.
04 - Gently brown your English muffins in a toaster while you're working on the gravy.
05 - Whip up your eggs in a non-stick pan. You can throw in a splash of milk for extra fluffiness if you want.
06 - Switch your broiler to high. Lay out the toasted muffin halves face-up on a cookie sheet. Top each with some country gravy, scrambled eggs, a piece of cheddar, and cooked sausage.
07 - Stick your assembled mini pizzas under the broiler till the cheese gets bubbly and gooey.
