No Bake Lucky Charms Bars (Print Version)

# Ingredients:

→ Base Layer

01 - 4 cups Lucky Charms cereal
02 - 4 cups mini marshmallows
03 - ¼ cup butter

04 - 16oz soft cream cheese
05 - 2 cups heavy cream
06 - ⅓ cup sugar
07 - 2 teaspoons lemon juice
08 - Green food dye (a few drops or to preference)

09 - Colorful marshmallows from Lucky Charms, pulled apart
10 - Sprinkles (if desired)

# Instructions:

01 - Lay parchment paper flat into a 9x9-inch pan and leave some edges sticking out for easy dessert lifting later. Don't skip this step; it'll save you frustration down the road!
02 - On low heat, melt butter in a big saucepan until completely liquid. Dump the mini marshmallows in and keep stirring until everything's smooth and glossy. Don’t crank up the heat, or the marshmallows might scorch! Stir continuously, removing from the heat after exactly two minutes. Mix in the Lucky Charms cereal quickly, ensuring every piece gets coated well with the melted marshmallow mixture.
03 - Scoop the warm cereal mix into the lined pan. Press it down firmly and evenly with slightly wet hands or a damp spatula to avoid sticking. Pack it tightly so it forms a firm layer. Leave it to cool completely before moving forward.
04 - In a large bowl, mix softened cream cheese and lemon juice together until fully blended and silky smooth. Use an electric beater to slowly add heavy cream while whipping until it thickens up nicely. Once thick, toss in sugar and keep whipping until it’s fluffy and holds its shape. Add drops of green coloring until the color looks bright and inviting!
05 - Make sure your cereal base has cooled, then spread the green cream filling evenly on top with a spatula. Slide the whole thing into the freezer for at least 4 hours. Overnight works great if you’re not in a rush! While freezing, sort the Lucky Charms box and pull out the fun marshmallow pieces for later.
06 - Right before eating, bring the dish out of the freezer and sprinkle the colorful marshmallows and sprinkles across the top. Lift the whole dessert using the parchment handles and cut it into squares. Let it soften for 5-10 minutes beforehand if slicing feels tricky. Serve cold for the best texture!
