Grab each potato and slice it thin—around 1/4 inch thickness. Then cut those slices into fry-sized strips. Using a mandoline can make this faster and keeps the size consistent.

Pop those cut potato strips into a chilled water bowl. Give it at least an hour or two. This removes the extra starch, making fries crunchier.

Get your air fryer hot by preheating it to 400°F (200°C) about 5 minutes before you're ready to cook.

Drain out that water and dry off the potatoes. Coat them with olive oil, pepper, salt, paprika, garlic powder, and grated Parmesan. Lay them out in a single layer inside the air fryer. If needed, cook in shifts. Fry for about 15-20 minutes, shaking the basket midway to brown them evenly.
