Pineapple Treat Bars (Print Version)

# Ingredients:

→ Crust Layer

01 - 3/4 cup cold unsalted butter, diced
02 - 1/4 tsp fine salt
03 - 1/2 cup white sugar
04 - 1 1/2 cups plain flour

→ Filling Mixture

05 - 1 tsp vanilla flavoring
06 - 2 eggs, large
07 - 1/4 cup flour
08 - 1 cup drained crushed pineapple
09 - 1/2 tsp baking powder
10 - 1 cup sugar

→ For Topping

11 - Powdered sugar to sprinkle on top

# Instructions:

01 - Fire up your oven to 350°F and get a 9x13 pan ready with parchment paper, leaving a bit extra on the sides so you can easily lift everything out later.
02 - Combine the flour, sugar, and salt in a bowl. Toss in the cold butter cubes, and use your hands or a fork to blend until you have a crumbly texture. Press this mix firmly into your pan to form an even layer.
03 - Put your pan in the hot oven and bake for roughly 15 minutes, until the sides look just barely golden. Take it out to cool while you whip up the next layer.
04 - In another bowl, beat the eggs and sugar together until smooth. Add the flour, vanilla, and baking powder, stirring well. Fold in the pineapple at the end – make sure there's no extra juice, or it won't set properly.
05 - Spread the pineapple mix over the slightly cooled crust. Return the pan to the oven and bake for 25-30 minutes, until the edges are firm but the center still has a slight wobble when shaken lightly.
06 - Let the bars chill completely in the pan before taking them out. Once cooled, sprinkle powdered sugar all over. Use the parchment to lift the bars out, and cut them into squares on a board.
