South American Herb Sauce (Print Version)

# Ingredients:

01 - ½ cup extra virgin olive oil
02 - 2 tablespoons red wine vinegar
03 - ½ cup parsley, finely diced
04 - 3-4 garlic cloves, minced or finely diced
05 - 2 small red chilies or 1 red chili, seeds removed and finely diced (roughly 1 tablespoon)
06 - ¾ teaspoon oregano, dried
07 - 1 teaspoon salt (coarse variety)
08 - ½ teaspoon pepper (black)

# Instructions:

01 - Combine everything in a single bowl. Let it rest for 5-10 minutes so the flavors soak into the oil. For best results, leave it sitting for at least 2 hours if you've got time.
02 - You can make this sauce ahead of time and keep it in the fridge for up to 24 hours.
03 - Brush it on steaks or chicken while they cook on the grill. Spoon a bit over your steak when serving. Works great as a salad dressing too.
