Southwest Baked Chicken Tenderloins (Print Version)

# Ingredients:

→ Spices and Seasonings

01 - 1 tablespoon olive oil
02 - 0.5 teaspoon table salt
03 - 0.5 teaspoon chipotle powder
04 - 0.5 teaspoon chili powder
05 - 0.5 teaspoon smoked paprika
06 - 0.5 teaspoon ground cumin
07 - 0.5 teaspoon garlic powder

→ Protein

08 - 450–570 grams chicken tenderloins or chicken breast cut into strips

→ Garnish

09 - 0.5 lime, juiced (optional)

# Instructions:

01 - Set oven to 190°C and allow to fully preheat.
02 - In a mixing bowl, combine olive oil, salt, chipotle powder, chili powder, smoked paprika, cumin, and garlic powder. Stir until evenly blended.
03 - Arrange chicken tenderloins on a lined baking tray. Drizzle the spice mixture over the chicken and toss until each piece is thoroughly coated.
04 - Transfer tray to oven and bake for 15–18 minutes, or until chicken reaches an internal temperature of 74°C.
05 - Optional: Squeeze fresh lime juice over the chicken before serving for added brightness.

# Notes:

01 - For milder heat, substitute chipotle powder with additional chili powder.
02 - Chicken breast cut into strips works well in place of tenderloins.
