Clean chicken thighs and dry them off with paper towels. Mix up some salt and black pepper in a small bowl and rub this mix all over the chicken pieces.

Heat up olive oil in a big skillet and cook the chicken until it's golden brown on each side over medium-high heat. Take out the chicken when done and put it aside.

Put ¼ cup olive oil in a big soup pot and warm it up. Toss in your chopped onions and red peppers. Cook them for a few minutes on medium heat until soft.

Stir in tomato sauce and all your spices (hold the salt for now). Let it bubble gently for a bit, then pour your chicken broth in.

Put the chicken pieces back into the pot. Give everything a good stir and let it cook slowly for about 10 minutes. Try a taste and add more salt if you think it needs it.

Mix the peanut butter into your stew and stir until it's all blended in smooth. Keep cooking until the stew gets nice and thick.
