Peanut Chicken Bowl (Print Version)

# Ingredients:

→ Protein

01 - 1.5 lb chicken thighs

→ Sauce Base

02 - 2 cups chicken stock
03 - ½ cup peanut butter
04 - ½ cup tomato sauce

→ Vegetables

05 - ½ onion, chopped
06 - 1 red bell pepper, chopped

→ Oils & Seasonings

07 - 1 teaspoon salt, or to taste
08 - 1 teaspoon black pepper
09 - 1 teaspoon bouillon powder
10 - 1 teaspoon cayenne pepper
11 - ¼ cup olive oil

# Instructions:

01 - Clean chicken thighs and dry them off with paper towels. Mix up some salt and black pepper in a small bowl and rub this mix all over the chicken pieces.
02 - Heat up olive oil in a big skillet and cook the chicken until it's golden brown on each side over medium-high heat. Take out the chicken when done and put it aside.
03 - Put ¼ cup olive oil in a big soup pot and warm it up. Toss in your chopped onions and red peppers. Cook them for a few minutes on medium heat until soft.
04 - Stir in tomato sauce and all your spices (hold the salt for now). Let it bubble gently for a bit, then pour your chicken broth in.
05 - Put the chicken pieces back into the pot. Give everything a good stir and let it cook slowly for about 10 minutes. Try a taste and add more salt if you think it needs it.
06 - Mix the peanut butter into your stew and stir until it's all blended in smooth. Keep cooking until the stew gets nice and thick.

# Notes:

01 - Stock usually has salt already, so taste your stew before adding extra.
02 - Want to switch things up? Try adding some ground cumin, chopped cilantro, garlic, fresh ginger, or ground coriander.
03 - If you like it hot, throw in some chili or habanero peppers.
04 - Don't have stock? Water works too, but you'll need to bump up your seasonings.
05 - Chicken can be swapped for beef or fish and it'll still turn out great.
