Spinach Feta Bake (Print Version)

# Ingredients:

→ Batter

01 - 150 grams regular flour
02 - 3 tablespoons olive oil
03 - 200 grams of Greek yogurt
04 - 100 grams crumbled feta cheese
05 - 2 eggs, large
06 - 125 ml plain water
07 - 1/2 teaspoon table salt
08 - 2 tablespoons shredded Gruyere or Kefalotyri cheese

→ Filling

09 - 50 grams crumbled feta cheese
10 - 1 tablespoon chopped fresh parsley
11 - Roughly 250 grams fresh spinach with stems removed, chopped small
12 - A tablespoon of chopped fresh dill
13 - 2 minced green onions, including their tops
14 - 2 tablespoons of olive oil

# Instructions:

01 - Grab a bowl and whisk the yogurt until smooth. Toss in eggs, olive oil, and water, mixing until smooth. Add salt, then slowly stir in flour a little at a time to create a pourable batter. Lastly, stir in your crumbled feta.
02 - Wash the spinach well and dry it completely. Chop it finely and mix it in a bowl. Add minced green onions, parsley, dill, and a little olive oil. Sprinkle in some salt and pepper, then toss everything together.
03 - Preheat your oven to 190°C. Use olive oil to grease a 28 cm round pan. Pour half the batter into the pan, spreading it out. Layer the spinach filling evenly over it. Add crumbled feta on top of the spinach. Mix 3 tablespoons of water into the leftover batter and spoon it over the top. Finish with a sprinkle of shredded Gruyere or Kefalotyri, drizzle some olive oil over it, and bake for about 70 minutes until it's beautifully golden on top.
