Turkish Flatbread With Cheese (Print Version)

# Ingredients:

→ Base

01 - 207 ml warm water
02 - 1 teaspoon granulated sugar
03 - 1 teaspoon quick yeast
04 - 300 g plain flour
05 - 3 tablespoons milk powder or 1 tablespoon bread improver (if you want)
06 - 1 1/2 teaspoons sea salt

→ Topping

07 - 3 tablespoons fruit syrup or pom syrup (if you want)
08 - 1 cup roasted sesame seeds (if you want)
09 - 1 egg, whisked
10 - 1 tablespoon virgin olive oil
11 - 2 teaspoons black cumin seeds (if you want)

→ Dairy Stuffing

12 - 2 cups grated Turkish kasar or stringy mozzarella
13 - 8 ounces soft cream cheese
14 - 1 teaspoon Middle Eastern Spice Mix (if you want)
15 - Spicy green and red peppers, chopped or cut into strips

→ Leafy Stuffing (if you want)

16 - 1 tablespoon virgin olive oil
17 - 1 medium yellow onion, chopped
18 - 6 cups fresh baby spinach
19 - 1 tablespoon fresh chopped dill
20 - 1 tablespoon fresh chopped parsley
21 - 1/2 teaspoon sea salt
22 - 1/4 teaspoon chili flakes
23 - 1/2 cup broken feta cheese

→ Meaty Stuffing (if you want)

24 - 1 tablespoon virgin olive oil
25 - 1 medium yellow onion, chopped
26 - 1 pound minced lamb or beef
27 - 1/4 cup toasted pine nuts
28 - 2 teaspoons ground cumin seeds
29 - 1 teaspoon Middle Eastern Spice Mix (if you want)
30 - 1 teaspoon sea salt
31 - 1 teaspoon cracked black pepper
32 - 1 teaspoon mild paprika
33 - 1/2 teaspoon ground hot pepper

# Instructions:

01 - Stir water, sugar, and yeast in a small bowl and wait 3 minutes until it bubbles up. Put flour, salt, and milk powder or bread improver (if using) in a big bowl. Make a hole in the middle, pour in the bubbly yeast mix, and knead about 6-7 minutes till it feels smooth. Cover with a cloth and let it grow for an hour until it's twice as big.
02 - Take a wide, flat dish and mix syrup with 3 tablespoons water. Put seeds in another flat dish. Keep both nearby.
03 - Put baking paper or a silicone mat on a big tray. Turn oven on to 450°F. Cut dough into 6 same-sized balls and roll each into a long oval about 1/2 inch thick. Put grated cheese, 3 tablespoons of cream cheese, and spices in the middle, but leave 3/4 inch empty around the edge. Fold and squeeze edges shut to make a boat shape. Flip it over and push down gently.
04 - Dunk each piece in the syrup water, then roll in seeds until they stick all over. Put them on your tray. Cut a deep line down the middle but stop 1/2 inch from both ends, and pull it open a bit. Push down slightly and add more cheese, spices, or peppers if you want.
05 - Put in the bottom of the oven for 10-12 minutes, then move to the top for another 3-5 minutes until they look nice and brown.
06 - Heat oil in a pan over medium heat. Cook onion until it goes clear. Throw in spinach, dill, parsley, salt, and chili flakes, and cook until spinach shrinks down. Mix in feta cheese and cook 2 more minutes. Take off heat and let it cool down.
07 - Heat oil in a pan over medium heat. Cook onion for 4-5 minutes until golden. Add meat, pine nuts, cumin, Middle Eastern spice (if using), salt, pepper, paprika, and hot pepper. Cook for 8-10 minutes until brown, breaking up the meat with a spoon. Take off heat and let it cool down.
