Soft Red Velvet Cookies (Print Version)

# Ingredients:

→ Cookie Base

01 - ⅓ cup melted butter, let it cool
02 - 1 box of red velvet cake mix
03 - 2 teaspoons of vanilla
04 - ½ cup powdered sugar for coating
05 - 2 big eggs

→ Cream Cheese Frosting

06 - 4 tbsp softened unsalted butter
07 - 2 cups powdered sugar
08 - 1 tsp vanilla
09 - 4 oz softened cream cheese

# Instructions:

01 - Set your oven to 375°F and get baking sheets lined with parchment paper.
02 - Stir together the cake mix, eggs, butter, and vanilla until it's all mixed up.
03 - Take 1 tablespoon of dough, coat it in powdered sugar, and place on the sheet. Leave about 3 inches of space between each.
04 - Pop them in the oven for 7-9 minutes until they crack and look set. Let them cool on the sheet for 10 minutes before moving to a rack.
05 - Blend the softened butter and cream cheese until smooth. Pour in the vanilla, then slowly mix in powdered sugar. Beat everything for 2 minutes.
06 - Spread about 2 teaspoons of frosting on the bottom of one cookie, then gently sandwich it with another.
